Surprise Crudité Dip
Raw veggies with dip are real lifesavers when you’re trying to lose weight.
When that sudden urge hits—the nervous kind of hunger, the one that needs crunching, munching, fidgeting with food…
When you open the pantry looking for something to snack on—maybe some cheese, or that big tub of yogurt you end up finishing because it just slides down too easily…
When you already know your healthy eating plans are falling apart, but you still can’t stop yourself…
That’s when you need a bowl of ready-to-eat, fresh-cut raw vegetables waiting for you in the fridge.
And instead of dipping them into the usual oil-lemon-salt-pepper combo, how about something a bit more exciting?
Like a creamy cannellini bean hummus?
Here’s the recipe—but be careful… if you’re trying to lose weight, don’t eat it by the spoonful!
INGREDIENTS

250 g (about 1 ½ cups) cooked cannellini beans

Garlic, to taste

About 6 tablespoons extra virgin olive oil

A pinch of salt

Plenty of black pepper

½ teaspoon turmeric

2–3 tablespoons grated Parmesan cheese
Total calories: around 800
Portions: About 6 — that means roughly 150 calories per serving, veggies included.
PREPARATION
Place all the ingredients in a blender and process until smooth and creamy.
If needed, add 1 or 2 tablespoons of water to adjust texture.
Store leftovers in an airtight container in the fridge for a few days.
You can also freeze it in small portions.
VARIATIONS

Swap a few tablespoons of olive oil with a dozen pitted olives

Add 7–8 walnuts or 2 tablespoons of sunflower seeds (reduce the oil slightly to keep calories in check)

Use curry powder instead of pepper and turmeric
